Oatmeal Carmelitas

I was going through my recipes the other day and came across an old favorite I hadn’t made in years.  This chewy delight has a rich nutty, chocolatey taste, makes a delicious energy-packed snack for the trail, and is easy to make.

In a large bowl, combine:
1 c. flour
1 c. quick-cooking rolled oats
¾ c. brown sugar, firmly packed
¾ c. butter or margarine, melted
½ tsp. baking soda
¼ tsp. salt

Press half of the crumbs into the bottom of a 9” square pan and bake at 350˚ for 7 to 10 minutes (until lightly browned).

Sprinkle over baked crust:
1 c. semisweet chocolate chips
½ c. chopped nuts

Mix well and drizzle over chocolate and nuts:
¾ c. caramel ice cream topping
3 tblsp. flour

Sprinkle remaining crumbs over caramel topping and continue baking another 15 to 20 minutes, or until golden brown.  Serve warm or cold, but it’s best while warm!
